Oct. 15


I want to thank the wonderful L. Diane for presenting me with the "Go away I'm writing" blog award. And in turn I'd like to pass it on to Linda Kage, Judy Croome, and Rosalind Adam.

One of my twitter friends, Kori Rockwell, asked for my chocolate chip pumpkin muffin recipe. So, for you, Kori, and all my dear blogging friends:

Choco Chip Pumpkin Muffins:

3 1/2 cups flour
3 cups sugar
1 tsp salt
1 tsp cinnamon
2 tsp baking soda
Mix together and make a well. Then add:
1 cup of veggie oil
1 tsp vanilla
2 cups pumpkin
2/3 cup cold water
4 beaten eggs
Mix well. then add:
6 oz. chocolate chips and, if desired, 1 cup chopped nuts, 1/2 cup flaked coconut

Fill muffin cups 2/3 full. Place in 350 oven for 20 min. Makes between 18 and 24 muffins depending on size.
Can also make 2 large loaves, and or 8 small loaves if you desire. I make muffins and loaves.
Once baked, these can be frozen to enjoy later.

    Those muffins look delicious. I've never cooked with pumpkin before. When Rod's feeling better I may well give them a try.
